Rabbit Pie
Not a real rabbit pie, of course. Boyfriend used to ask "is everything an art project?". Well, yeah, everything sort of is, isn't that the point? This is one of the pumpkin pies we brought to dinner, the other went home in stomachs. I infused the whipped cream with fresh rosemary, which actually tasted quite good. The pumpkins I used were from our Farmer's Market, carefully chosen; you have to check the stems to be sure they haven't been harvested prematurely. Look for a shrunken dried stem, anything slightly green or moist or moldy won't keep and won't have maximum flavor. For the crust I used fresh organic butter and organic leaf lard from a pig whose name was "lefty". The flour is white spelt.

Bunny pie? Art projects? Why is this so wrong?
Yours is the second thanksgiving pie I've run across to have a spelt crust. I don't like pumpkin pie, it does something to my tummy but I do love sweet potato pie. Rosemary and sweet potato, can this be done?

For the squash, I used butternut, not pumpkin. More bang for the buck from a volume perspective, and nobody but me knows it isn't pumpkin...

What a beautiful pie. I love all things pie, but especially punkin, and anything with a rabbit on it (that's not real rabbit, of course). Our pie had rabbit on it, in the form of the usual drifting of fine soft hair everywhere, no doubt. I'm always hesitant to bake things and give them to people, as I figure with 6 cats and 3 buns, there's likely to be some hair in there somewhere.

When the children were small I used to make elephant pie -pretty much the same idea.
